SCHEDULE OF THE EXPERIENCE
Our oenologist will illustrate the production process of a Metodo Classico sparkling wine and will help you producing your own bottle!
• The life cycle of the vines, soil management and harvesting techniques
• Pressing of the grapes: free-run must, second and third fraction
• First fermentation (alcoholic fermentation)
• Liquer de tirage, second fermentation in the bottle and ageing on the lees
• Remuage: pupitre and gyropallet
• Manual disgorging of the bottles: practical test
• Liquer d’expédition and corking: practical test
• Tasting of a sparkling wine sur lattes plus other three finished Metodo Classico
The glasses of Metodo Classico will be paired with a 3-course menu.
