Gnocco Fritto
The origins of the gnocco fritto must be traced back to the cooking tradition of the Longobards, a Germanic people who ruled large parts of the Italian Peninsula from 568 to 774 and made Pavia capital of their kingdom. Many years later, around the year 1000 a.C., the gnocco fritto became widespread all along the Padan Plain as the basis for the peasants breakfast. Between November and December, they slaughtered the pig and used the lard so obtained to fry a dough of wheat, water and lard.
